Paradox Pastry is Cville’s tastiest new addition in 2012. Opening their doors in the Warehouse District next to Bluegrass Grill and Glass Haus Kitchen, Paradox has quickly become a Cville staple. Owner Jenny Peterson shared their gingerbread cookie recipe for our Holiday Recipe Series, making this weekend a great weekend to bake some last minute holiday cookies! (Of course, you could always stop by Paradox to pick up some of these beautifully decorated treats…)
Gingerbread Cookies
Ingredients
3 cups unbleached all-purpose flour
3/4 cup packed dark brown sugar
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon table salt
3/4 teaspoon baking soda
12 tablespoons unsalted butter (1 1/2 sticks), cut into 12 pieces and softened slightly
3/4 cup unsulphured molasses
2 tablespoons milk
Instructions
Mix flour, spices, salt and soda together in a large bowl. Cream the butter and brown sugar together in a mixer with the paddle attachment until light and fluffy. Add the molasses and milk, mix until well-combined. Add the dry ingredients all at once and mix on low just until combined. Gather into a ball, flatten into a disk and refrigerate for at least 2 hours so it will be easier to handle.
Preheat oven to 350 and line cookie sheets with parchment paper. Take half of the dough and roll on flour dusted work surface to about 1/4″ thickness. Cut into desired shape and place on cookie sheets. Bake 8-11 minutes until the cookie barely gives in the center when pressed gently with your finger.
Decorate with color flow or royal icing (follow the directions on the color flow or meringue powder box!!).
