A Simple&Cider

This week, we once again will share the magic of a recent forage dinner party. Forage is constantly creating imaginative atmospheres and decadent meals, from their Whimsical Picnic and Preserves to Hemingway’s Paris. Look out for posts this week on their most recent dinner series – Color Me Bohemian.

Forage’s Justin Stone is also constantly creating delicious cocktails featuring the local Potter’s Cider. Below is the recipe for the Color Me Bohemian dinner party’s cocktail.

Ingredients for Simple Syrup:

– 2 1/2 Cups of fresh rhubard, chopped in 1/2inch pieces
– 2 Tbs of fresh rosemary, diced + 1 intact sprig
– 1 1/2 Tbs of fresh ginger, peeled and diced
– 2 Cups of water
– 1 Cup sugar (add more if you want a sweeter syrup)

Combine water and sugar in medium sauce pan over medium/hot heat (enough to boil). Stir lightly as sugar dissolves. When water comes to a boil add rhubarb, ginger, and rosemary. Boil for about 3 minutes stir occasionally. Reduce to a simmer for about 5 minutes then let sit and cool. Once cool, strain using fine mesh chinois or other strainer. Requires pressing mass of rhubarb, ginger, and rosemary repeatedly into strainer to remove as much liquid as possible. Pour liquid into storage jar and submerge spring of rosemary into it. (refrigerate)

Ingredients for Cocktail:

– 1 oz rhubarb/ginger/rosemary simple syrup
– 1 oz gin
– 3-4 oz Potter’s Farmhouse Cider

Pour simple syrup and gin into glass, add cider and serve.
Suggested glass: Flute
