Holiday Recipe Series: Linnea’s Breakfast Casserole

This breakfast casserole always reminds me of holidays at home. Even though I’m in Cville this year, I’m recreating my mom’s recipe for that cozy Christmas morning treat. This dish is not only delicious, but it is incredibly easy to prep – the busy cook’s dream during the holidays! My mom loves this casserole as it feeds our big family (even though every last piece is gone!) and she can prep it quickly the night before Christmas, and throw it in the oven in the morning.

I took some liberties with her recipe this year, making it my own, as anyone could easily do —- vegetarians? No problem! Make this dish an all veggie dish by adding peppers, spinach, mushrooms, and anything your heart desires.

10 hearty white bread slices, cubed
2 cups cubed cooked ham, sausage, or veggies (you choose!)
Finely chopped onion
Minced garlic
2 cups (8 ounces) shredded cheese
6 large eggs
1 1/2 cups milk
1 tsp. salt
1 tsp. dry mustard
1/4 tsp. paprika
1/2 tsp. Worcestershire sauce
Dash of Hot Sauce


Place bread cubes in lightly greased 13 X 9 baking dish.


Sautee the onions and garlic until golden, add sausage. This year, I used hot Italian sausage and half a package of ground sausage. (Let the meat cool once cooked.) Top evenly with meat (or veggies, if you are making this a vegetarian dish) and cheese.


Whisk together eggs and remaining ingredients; pour evenly over bread. Cover and chill 8 hours (overnight).

In the morning, bake, uncovered, at 350 for 50 to 55 minute or until set. Let stand 5 minutes before cutting and serving.
